Spring Byington is a notable American writer and artist. Born in Colorado Springs, Colorado, Byington was an avid patron of art and letters who attended the University of Colorado. He also studied briefly at the University of London. Though he never earned a degree from the University of London, Byington was an accomplished author with a number of honors to his credit. Early Years Spring Byington was born in Colorado Springs, Colorado and was one of seven children of Benjamin Byington. Benjamin served in the army during the Civil War. Byington’s parents, fearing that their son would become a soldier and a deserter, sold him to an estate in New York City. Byington lived there for the next seven years, until he was sent away to boarding school. Spring Byington graduated from the Colorado Springs Academy in May of 1886 and began a two-year spell at the academy, where he would earn a degree in chemistry.

Personal Life Byington’s private and professional life span is sometimes difficult to pinpoint. Spring Byington lived in New York City between the ages of twenty and thirty. Though Byington is credited with being the first American chef, according to biographer Michael Frick, Spring Byington probably did much of the cooking for his brother, Herman Bittington. Spring and Herman Bittington also worked as chefs at the prestigious Hotel Pennsylvania in New York City.

After leaving the hotel, Bittington returned to his birthplace in Boston and opened his own restaurant, The Baking House, on East Main Street. A few years later, Bittington moved to Paris and opened his own restaurant, Baking and Savory. Baking House became an immediate success and Byington was named the first American chef to be profiled in Variety magazine. He received six additionalredited chefs’ awards including Outstanding Chef.

After working for both Spring Byington and Baking House, Byington decided to pursue his culinary dreams and left his former employers, only to find that they had changed their name. Spring Byington and Helene were married in a church in Beverly Hills, California in August of 1935. Byington died two months later, but the couple lived together and had six children. Spring Byington passed away in September of 1938.

Besides being a famous chef, Byington’s other career was as a reporter. He covered many topics from race to music to fashion for Vogue magazine. Helene Byington wrote biographies and memoirs about her husband and the many travels they took in their personal life. She also wrote about her life as a family woman, working as a nurse, a housekeeper, and a hostess.

Byington was an active member of the Women’s Volunteer Association and was active in political, social, and environmental issues. Spring Byington also served as editor in chief for Variety magazine. Her biographical book about her marriage to Helene Bilington was published in 1940. She continued to write books about her marriage and her travels until she retired to take care of her mother, who suffered from diabetes.
